30 in 30: Rare Beef Tenderloin Sandwich

Rare Beef Tenderloin Sandwich

4-5 oz. filet mignon per sandwich (preferably 1 1/4-1 1/2 inch thick).

Rub the outside of each filet with a generous amount of salt and pepper.

In 2-3 T. oil, sear each filet 2-3 minutes per side.  Place in baking dish.

Bake at 400 degrees for 6-8 minutes, for rare to medium rare results.

Remove from oven and tent with foil for 5-10 minutes.  Slice to desired thickness.

Horseradish Sauce:

1 c. real mayonaisse
3-4 T. horseradish

Spread horseradish mayo on each side of an open Sister Schubert's roll.  Stack with tenderloin. 

Eat.  Be happy.
