30 in 30: Ice Cream Sandwich

Ice Cream Sandwich

Slice Sister Schubert's rolls in half (one whole roll for each sandwich you plan to make).  Soak each piece in melted butter, then dredge in granulated sugar.  


Bake slices at 350 degrees for 8 minutes, then broil for an additional 3-4, until golden brown.


Cool.  Bread should be quite crisp.  


Place a dollop - between 1/4-1/2 c. of slightly softened ice cream on one slice.  


Top with another bread slice.  If not serving immediately, wrap separately and tightly in plastic wrap and freeze until time to eat.


Though any flavor ice cream would work, I used Culinaria's Coconut Mango Ice Cream.  Oh. My. Gosh. Even if you don't make the sandwiches, you have GOT to try this ice cream.  Seriously fantastic.  Really.

Can this be made with Rhodes rolls? No sister schuberts in this area.

I don't know. I think I have used Rhodes in the distant past, but these SS rolls are unique in flavor and texture.
